Production process of salt straw mushrooms:

- Boil boiling water, drop fresh mushrooms in about 5-7 minutes, remove the mushrooms into cold water bowls, pour mushrooms into the drain to drain;

- Place mushrooms in plastic bag, jar, plastic valve ... Each layer of mushrooms, a layer of salt in proportion of 1kg of mushroom + 0.3kg of dried granular salt + 0.2 liters of saturated saline solution The

- Fill the salt with salt, add a layer of dry salt on the surface to submerge the mushrooms in salt water, avoid mold growth.

- For 1-2 months or longer, add 3-4 kg of citric acid to 1 ton of mushrooms. For 15 days, the mushroom will be stable in quality, then classified or peeled mushrooms. Salt mushroom ensures good quality: no moldy, pleasant aroma, salt concentration reaches 230Be, pH = 4, mushroom firmness, no crushed, no other impurities, saline color crystal-clear. Buyers of mushrooms will pour out the mushrooms to drain completely and weigh the mushrooms, salt solution retention (to preserve mushrooms in salt water).

- The rate of mushrooms compared to fresh mushrooms is about 60-70%.
